A high protein vegan breakfast!
Turn your stove top to medium high heat and add 1 tablespoon of coconut oil to your pan. Let the pan warm up on the stove while you move on to step 2.
Dice your jalapeño or bell pepper up and remove the seeds. Place your pepper into a bowl and then place your block of tofu into a bowl and begin mashing it up with your hands until you have a bowl full of crumbled tofu and peppers.
Transfer your bowl of tofu and peppers to your hot pan and stir constantly until golden brown. Remove from burner and let cool for a minute, add salt and pepper to taste, and top it off with parsley leaves!
